Petai can be referred to as stink beans (perhaps because of its smell) or twisted cluster beans or among Malaysians, simply petai beans.
Sambal Petai

Ingredients:
12 prawns, cleaned and peeled
8 fresh chillies, crushed
200g petai beans
4 red shallots, crushed
1 tbsp tamarind juice
150g dried shrimps, soaked and minced
5 cloves garlic, crushed
Salt to taste
1 tbsp sugar
Method:
1. Heat up a pan, add oil, fry the crushed garlic and red shallots till fragrant.
2. Add in the crushed chillies and minced dried shrimp, stir fry till fragrant.
3. Put in the Petai beans and prawns, stir fry for 2 minutes or till prawns are fully cooked.
4. Add in sugar and enough salt, stir fry till mixed well.
5. Turn off the fire, add in the tamarind juice. Served with steamed rice.
Peeled- kupas kalau di Melaka kita kata kopek kulit, shallots- bawang merah, crushed – tumbuk atau hancurkan, tamarind juice – air asam jawa, dried shrimp – udang kering. Soaked- rendam, minced- cincang, garlic- bawang putih, salt to taste- garam secukup rasa, tbsp- tablespoon- sudu besar, heat up- panaskan, stir fry – kacau sekejap, steamed rice- nasi yang dikukus, fragrant- berbau harum
